Sauteed Mushrooms in Butter, Garlic & White Wine on Butter Toasts - Vegetarian Party Option

Perfect vegetarian option for parties, tea breaks, snacks, or even breakfast!
Super easy to prepare and so tasty!

I got the mushrooms from a farmers market which we visited last weekend.

Wait. A farmers market in Hong Kong???? Really???
Yesss! I'll post about it soon.

Anyway, yes. Fresh produce. Lots of fun. Now, back to the snack.

Recipe
- Your favorite bread, cut the way you like it (I used Yamazaki Onion bread, removed the crust and cut into square-ish shape)
- Your favorite mushrooms
- Garlic, minced
- Butter
- White wine
- salt and pepper

Butter your bread generously, grill on a frying pan or oven until golden brown, set aside. Melt butter in a saute pan, saute garlic until fragrant, add mushrooms, cook until there's a bit of a brownage going, add white wine, cook until the white wine's reduced, season with salt and pepper, done. Add the mushrooms on top of the butter toasts.

Although I am a huge carnivore, no meat does not always mean no good :)

Black Truffle Pate, Mixed Mushrooms & Prosciutto Pizza from Our Weekend Pizza Party

My two girlfriends and I tried to make our own pizza last weekend. Actually they made the pizza, I was just busy trying to calm super cranky baby M down.. ^_^'

We (i.e. actually it was mostly Ieie, she did all the kneading!) made the dough following this recipe. The recipe is pretty easy to follow (easy for me to say as I was not the one who kneaded the dough heheheh) and we're pretty pleased with the result.

We made two kinds of pizza...the one which impressed me the most was the one with this black truffle pate.

The dough was simply rolled thinly, placed on a well oiled baking tray.

Spread quite a bit of the black truffle pate, add chunks of mixed mushrooms, season with salt and black pepper, topped generously with grated cheese (we used a mix of mozzarella, parmesan and cheddar), and bake for about 15-20 minutes in a 250C preheated oven.

Once it's out of the oven, we added more black truffle pate and placed a few pieces of prosciutto. Let them fold casually like cute little rosebuds.

Absolutely fragrant and delicious!

As for the other pizza...
Salami, Bacon, Cheeses, Asparagus & Cherry Tomato Pizza
We just slathered the dough with a bit of ketchup (oppps, but it's yummy, trust me), added some grated cheeses, salami and bacon, topped with more cheeses, added halved cherry tomatoes, and some baby asparagus. After baking, we added some fresh basil leaves from my tiny herb garden. Yummy!

Baby M was super cranky and clingy the whole time, I had to carry him around with me, even when I tried to  take some pictures. Thanks to Ieie for documenting this crazy-bad-mama moment ^_^

We ended the meal with Ieie's homemade tiramisu topped with fresh berries and some bad Sunday TV (it's TVB Jade's latest variety show where we had to guess the girl among drag queens).

Mushrooms & Napa Cabbage Miso Soup
I love my veggie tasty, so I made this side dish for a last weekend's meaty lunch. The weather was indeed a bit too warm for a hot soup, but still...miso made things so tasty we would've consumed this in our underwear dripping with sweat if we had to ^_*

Quite a seksi idea? Ahem! No, I didn't think so.

What's seksi though...is this bowl I got from Franc Franc, from a quick shopping trip with Lia of Bentolicious. We both went crazy and I am so glad I did. I love my purchases!
Mushrooms & Napa Cabbage Miso Soup
Recipe
- 1 small napa cabbage, sliced
- 1 cup mushrooms of your choice
- hot water
- miso paste
- a touch of sugar
- crunchy seaweed paper/strands for garnish (optional)
Bring a pot of water to boil, add napa cabbage, cook until they reach the desired level of crunchiness/softness, add mushrooms, add miso paste bit by bit until you reach the desired level of flavor, balance it with a bit of sugar. Garnish if you wish.

In 30something C weather like this, turn on your fan/aircon (or take off clothes?) and start slurping.

Mie Soa with Oyster Sauce Grilled Chicken, Shrimps, Napa Cabbage & Shimeji Mushrooms

Mee Soa with Oyster Sauce Grilled Chicken, Prawns, Napa Cabbage & Shimeji Mushrooms
I am not a big fan of beehoon (bihun/mai fan/rice noodle), but I am a huge fan of mie soa (min sin), it looks like beehon, but it is more...stretchy and softer. My mom doesn't really cook, but she makes really good simple mie soa with silk squash and a bit of broth. She always made me that dish when I get sick. I am not sick, but I miss the dish and decided to make a version of it with ingredients that I had in my fridge.


Recipe
Oyster Sauce Grilled Chicken
- 1/2 - 1 chicken leg fillet per person
- Oyster sauce, sugar, pepper, oil
Preheat oven to 250C, rub the chicken fillet with oyster sauce, sugar, and pepper generously, add a dash of oil and rub well. Grill until the skin is golden brown and the meat is nicely cooked, set aside while preparing other ingredients


Broth
- 1 box of chicken stock (if you had homemade chicken stock, it'd be fantastic!)
- 3 cloves of garlic, crushed
- a cup of shimeji mushrooms
- a cup of napa cabbage, chopped
- a cup of shrimps (optional, I added this just because I had it in my fridge)
- a bit of oil, pepper, sugar
Saute garlic with a bit of hot oil, add napa cabbage, add mushrooms, add chicken stock, bring to boil, add pepper and sugar if you wish, add shrimps only at the last step and only until it's just opaque.


Mie Soa
- allow 1/2 to 1 piece of mie soa per person
- Boiling water, salt
Dip mie soa into a pot of boiling water with salt on stove top, just until it's softened, shock with cold water if not consumed immediately. Place mie soa into bowls, add broth, mushrooms, veggie, shrimps and sliced grilled chicken and...


...slurp!

Easy Side Dish- Mushroom, Garlic & Butter Rice

Mushroom, Garlic & Butter Rice
Just another easy peasy side dish I like to make when I'm not too lazy to make another one-pot-all-in-one dinner ;)
I normally serve this "fried rice" with a simple meat dish (that night, it was lamb chops grilled with garlic, butter and herbs), love the earthy, garlicky and buttery flavors.

Recipe
- a plate of rice (not too mushy, preferably overnight rice)
- a cup of mushroom of your choice (I used shimeji, because they're cute!)
- 2 cloves of garlic, minced
- butter, salt and pepper

Saute mushrooms and garlic in butter, add rice, season, mix well and serve.

Gosh I love one-liner recipes :D

Easily Cheesy - Zucchini, Mushroom & Chicken Franks Slices


Please excuse below uncreativity...

Grated mozzarella and parmesan mix on promo at City Super = HK$39 for two packs
Overpriced zucchini sold at the only supermarket below my apartment = HK$9.80 for two small ones (Robbery!)

Leftover grated mozzarella and parmesan mix and zucchini + seeing just the right recipe for them = priceless!

Saw this recipe of Ham, Zucchini & Mushroom Slice over at Daphne's blog, and I knew I just had to try it. The cheese, the zucchini in my fridge....it's fate!

...no it's not! You bought them especially to make this recipe.
Oh yeah, serendipity? Not so much!

The recipe is idiot & failure proof, I wonder if Daphne tailor made it for me?

Hop over to Daphne's site for the recipe, I simply changed ham to chicken franks (it's all I had in my fridge).

Soon after messing about with ingredients and warmed my home with the hot oven, while radiating delicious cheesy scents to make my neighbors drool (without offering them any of the end products - wow. I AM mean!)...I ended up with this tray of gloriously golden, cheesy deliciousness.

Perfect for breakfast, snack or light lunch with a side salad/bacon/fried chicken? :D
