Creamy Fish & Tomato Soup

Fish & Tomato Soup
Another soup that's supposedly good for me (in terms of being a milk-producing cow ^_^)...but I love this one. Creamy fish soup with a bit of a tang from the tomatoes :)

As always, it's super duper easy to make.
Fish & Tomato Soup
Recipe
- 1 piece of grass carp belly (around HK$15), or you can use your desired type of fish
- 4 tomatoes, cut each into 6-8 sections
- 2 cm ginger, crushed
- hot water, olive oil for pan frying the fish, salt and white pepper

Clean the fish thoroughly, scrub with a bit of salt to get rid of any slimy surface, season with salt and pepper generously, pan fry with a piece of ginger until the skin's golden brown in a bit of hot olive oil. Add hot water into a pot, add tomatoes, the remaining of ginger, and the fish, bring to boil, simmer until the soup is creamy. Season with salt and pepper.

Roast Duck Fried Rice

Got some leftover roast duck?
Roast Duck Fried Rice
Too hard & dry to consume on its own?
Not enough for two?
Need a quick and tasty way out?
Make fried rice :D

Roast Duck Fried Rice
Recipe
(serves two)
- 1.5 cup rice (I used leftover rice which had been in the fridge for one night)
- 2 cloves shallot, sliced thinly
- 1 sprig scallion, sliced thinly
- a few slices of roast duck, diced, remove excess fat, but leave some (I used leftover roast duck, but you can buy fresh)
- olive oil, fish sauce, white pepper

Saute shallot in a bit of hot olive oil, add diced duck, let cook a little to render some duck fat goodness, add rice, season with fish sauce and white pepper, mix well, add scallion, mix well, serve.

There's just no way it's not tasty :)

Rolled Toasties - My Low B Breakfast

Rolled Toasties
Just my (another) low-b (idiotic) way to serve toasts.
Perfect for snack/teatime/breakfast.

Use white bread or wheat bread (I love them crustless), add any filling you like...roll them and place them on a lightly buttered pan (well, you can generously butter the pan if you want your toasts to be more golden), brush the top with more butter and grill in a preheated oven until golden.

Easy yummiliciousness! Buttery, slightly crunchy toasts with melted, gooey goodness oozing from the inside...oh lala!

What's inside my rolled toasties?
- the Classic: peanut butter & strawberry jam
- the Indonesian: butter & chocolate sprinkles
- the Savoury Sweet: cheddar cheese & condensed milk
- the SC: peanut butter & condensed milk

My Weird Noodle Habit - Shin Ramyun, Egg, Cheese & Potato Chips

This is a weird instant noodles habit I picked up from my roommate when I was in Sydney.

It's sooo damn good, I just have to spread the gospel ;)

Shin Ramyun instant noodles + Egg mixed into the soup + a slice of el-cheapo processed cheese + ...a small mountain of potato chips = instant junk meal of champions!

The egg made the soup thick and creamy (a good source of protein for poor international students), the melted cheese...well, melted cheesy goodness...there's no way it's
not yummy, and potato chips in the soup? Love the extra crunch, and love them even after they're soft and soaked in the Shin Ramyun's tasty soup. I used some leftover Lay's sour cream and onion potato chips - but you can use anything else that will complement the flavor of the instant noodle's soup base.

Unhealthy? Of course.

Weird? Definitely.

Yummy? Abso-freaking-lutely!

Don't knock it 'til you try it :D
