Cherry Tomatoes, Bacon & Cheese Tarts
I had a sudden craving of pies or tarts yesterday. I blame watching too much Masterchef ;)
Luckily, I have some puff pastry in the fridge. I've asked for some pie ideas on twitter, and Pick Yin threw a brilliant idea, tomato pie :)
I can already imagine how refreshing the tomatoes are gonna be. The perfect (and light??? Errr...considering the amount of cheese and bacon I threw into this mix, maybe not? Sorry for thinking out loud) savory tart for summer!
Recipe
- Frozen puff pastry, thawed (or freshly made, if you're up for it, I've tried making my own using Jamie Oliver's recipe here)
- Cherry tomatoes, halved
- Bacon, chopped
- Mixed of grated cheeses (I used mozzarella, cheddar and parmesan)
- A few pieces of basil leaves, chopped (I used fresh from my mini and unhealthy herb "garden")
- Butter, black pepper, a bit of flour (to roll the pastry)
Preheat oven to 200C, roll puff pastry on a lightly floured surface thinly. Butter/grease some tart mold or ramekins, press down the rolled pastry and remove the excesses. Add cherry tomatoes, topped with bacon, basil, cheeses, add a bit of black pepper, bake until the pastry and cheeses are golden. Garnish with a bit of fresh basil. Serve hot.
