- 2 cups of shrimps, shell removed, deveined, butterflied
- shrimp marinate: tiny bit corn starch, chicken stock powder, salt, pepper, chilli powder
- 4 eggs, beaten
- a sprig of spring onion, chopped
- fish sauce, pepper, olive oil
Marinate shrimps while preparing the rest of ingredients. Season beaten eggs with fish sauce and pepper, add chopped spring onions in too. Heat up oil in a wok, add shrimps, cook quickly until it just turns pink, pour egg mixture, let cook for a bit, scramble a bit, remove and serve. Do not overcook the shrimps and the eggs.

Looks good! Prawns and eggs dish is a family favourite. Like you mentioned, I, too cannot get the way it should be done! It's the 'wok hei'! I used a non-stick pan. Duh!

ReplyDeleteWow, gorgeous photos! I need to try this right away, although I, too, use a nonstick wok—I know—and my stove doesn't have powerful burners. But even an inferior version would surely be yummy.

ReplyDeleteMoms always have that one thing that tastes better when they make it. I bet when you have lil SC, he will try to make something you make and it won't taste as good. ;)

ReplyDeleteOh God, THIS IS ONE OF MY FAVE CHINESE DISHES. EVER. Momma Lee makes this for me sometimes when we manage to get hold of yummy prawns (which isn't that often) so it's a total treat. LOVE IT.

ReplyDeleteIt looks and sounds delicious. I never thought of cooking prawns (or any shellfish) with eggs. Are there other Chinese dishes like this?
