Caramelized Grilled Banana with Condensed Milk

A simple yet decadent treat for a sloth x glutton crossover like me.

Preheat oven to 200C. Get some super ripe bananas (I like using mini or emperor bananas as they are not mushy), peel the skin and halve them length-wise, place them flat side down on a lightly greased pan, on top of each one, add a tiny bit of butter (about 0.5cm dollop). Put the pan on the top rack of the oven, grill until gloriously golden. Remove from oven, drizzle some condensed milk over them (I used both original and chocolate condensed milk) and devour.

If only I had some cheddar to shave on top, it would've made the whole combo even more deliciously unreal. If you wanna improve the presentation (aka, not making them look like a pile of crap, like mine T_T), you can dust some powdered sugar, or serve it with ice cream, add a dainty piece of mint leaf etc.

As you can see, I didn't bother T_T

Halloween is coming and I feel obligated to do something pumpkin to compensate the lack of slutty costume planning. So this is what I did.

You know my baking is the exact opposite of refined. No cute decoration, it's not a super smooth cheesecake, not done in a proper cake mold. It's pretty rough around the edges with bits of roasted pumpkin in it...or maybe I should call it "rustic".

And don't ask me what's with the peanut butter. Why did I think that peanut butter plus roasted pumpkin plus oreo would be a good idea? I don't know. But, luckily, the end result was pretty damn delish. Phew!
Roasted Pumpkin Cheesecake with Oreo Peanut Butter Crust
Recipe
- 1 block of cream cheese
- a quarter of a small (around 15cm diameter) pumpkin, remove seeds, remove skin
- 3 tbsp sugar
- 3 tbsp cream
- 1 egg
- 1 tsp corn starch
- 1 whole packet of oreo
- 2 heaping tbsp peanut butter
- 1 tbsp butter

Preheat oven to 180C, roast pumpkin until soft. Meanwhile, prepare crust. In a food processor, pulse oreos + peanut butter + butter until smooth. Pour into lightly greased pan. Set aside.

Once soft, remove roasted pumpkin, set aside to cool down, cut into chunks. Cut cream cheese into chunks, throw it into food processor, add the rest of the ingredients, pulse until everything's combined. Don't worry about little bits of pumpkin. Pour batter onto the crust, bake in 150C oven for about 20 minutes. Cool down and refrigerate.

Or spoon the custardy warm batter fresh out of the oven with a spoon, and ofcourse, lick the spoon clean.

Super Simple Steamed Fish with Lemon and Garlic Recipe

Simple Steamed Fish with Garlic and Lemon
After an exhausting session at the gym, I wanna be a good girl, but I don't wanna eat something (salad? fresh fruits?) that would make me hungry after an hour and end up eating a large bag of chips or a bowl of sinful instant noodles with more sinful frills. All of my hard work would be wasted!

I need to eat something savory, light yet satisfying, and easy to prepare.
This is perfect! I adore the classic soy sauce/ginger/chilli/garlic/fermented black beans/spring onion combo, but it's so tasty, it makes me end up eating a few bowls of rice with the sauce alone. This one is much lighter and brighter, but still flavorful.

Recipe
- your favorite fish (it can be with bone or fillet, I used pomfret)
- 1 lemon
- 2 cloves garlic, crushed
- white pepper, fish sauce
- hot water for steaming

Clean your fish, place in a dish you'll use to steam, squeeze juice of half a lemon, scatter the garlic around it or stuff some into the cavity if you're using whole fish. Pour some boiling water into wok, place a saucer or a small bowl with its bottom facing up, place your plate with the fish on top of it so that the water won't get into your fish dish (you can use a steamer if you have), cover the wok and steam the fish until it's just done (mine took about 8 minutes). Once done, drizzle a bit of fish sauce, and if you want, garnish with freshly chopped coriander (which I didn't use simply because I didn't have one in my kitchen).

I could just eat that for dinner, or with a bit of brown rice and vegetables.

I feel healthier already...
But I am sure I'll get back to the normal junk food programming soon.
I am weak like that.

Super Easy Chocolate Cheesecake

Lazy. That's me.
Too lazy to melt chocolate, too lazy to melt butter, too lazy to line a proper cake mold, too lazy to process each ingredient correctly, and definitely too lazy to get dressed, go out, and buy chocolate cheesecake.
So, I just dumped ingredients into food processor and baked an easy chocolate cheesecake.

Short-cuts is my life.

The cake isn't smooth, it has chocolate bits all over it and stuff...but since it has cream cheese, chocolate, sugar and oreos...how bad can it be?

Recipe
- 1 block of cream cheese
- 1 bar of lindt dark chocolate
- 3 tbsp cocoa powder
- 5 tbsp sugar
- 5 tbsp cream (I don't know why I measured like this, I am so crap at writing recipes)
- 1 egg
- 1 pack of oreos
- 3 tbsp butter

To make crust, throw the whole pack of oreos and butter into food processor, pulse until smooth, pour into a  lightly greased pan, press well onto the pan. To make cheesecake, throw everything into food processor, pulse until everything's well blended (there will be bits of chocolate, let them be), pour into pan, bake in 180C oven for 30 minutes. Let cool and refrigerate to set and consume later, or if you're crazy impatient like me, just dig into the hot stuff with a spoon or something.

And don't forget to lick the spoon.

The Bin Tai - Ham, Cheese, Fried Egg, Mayo, & Potato Chips Sandwich
Junk food haters, cover your eyes. This post is gonna disgust you to oblivion.
Inspired by e_ting at desk's post, the nutella cookie peanut butter sandwich, last night I made this monstrosity that I named "the bin tai" (Cantonese for perverted).
It's fully loaded with all kinds of junk that I found in my kitchen.
The Bin Tai - Ham, Cheese, Fried Egg, Mayo, & Potato Chips Sandwich
It's like this:
- A slice of buttered bread
- Slather mayo
- Add a slice of ham
- Add fried egg (runny yolk ftw)
- Add potato chips (I used Lay's sour cream and onion)
- Add a slice of "cheese"
- Add more potato chips
- Dump in the oven until the "cheese" melted
- Squeeze a few dots (or dollops) of mayo
- Squeeze a few drops of ketchup or chilli sauce

If you're up for it, top it with another slice of bread.
